Delicious and Nutritious Sourdough Protein Pancakes

There are several reasons why you should consider adding sourdough protein pancakes to your breakfast rotation:

These hearty pancakes are very filling, delicious, and probably as healthy as a pancake can possibly be! 

And this recipe is a great way to further utilise your starter and/or put to use any excess starter you’re needing to discard. 

Ingredienrs:

•1 cup - Flour (any type will work! I used organic bread flour)

•1/4 cup - Protein powder (any type! I used hemp protein powder for these)

•1+1/4 cup - Milk (any kind)

•1/4 cup/50 grams - Sourdoughstarter/discard

•1 egg for extra crispiness & protein (optional)

•2 tablespoons - Melted butter or oil of choice

•2-3 teaspoons - Baking soda or powder

•1 teaspoon - Vanilla

•1/4 teaspoon - Salt

 

Mix flour, protein powder, milk, salt, and sourdough starter together in a bowl. 

Leave to ferment for at least 30 minutes. *For best results, leave mixture in a bowl in a fridge to ferment for up to 48 hours! The longer the ferment, the more bubbly crispiness. I love a long ferment with these. 

Then add your melted butter or oil, baking soda, and optional egg. Whip up thoroughly while you preheat your pan. 

Fry up in your favourite pan. Cover until you flip. Then top with your favourite toppings.
