Sourdough snacking cookies are not only delicious but also a great way to reduce food waste by utilizing excess sourdough starter.
Ingredients
- 1 cup of active sourdough starter
- 1/2 cup of unsalted butter, softened
- 1/2 cup of granulated sugar
- 1/2 cup of brown sugar
- 1 egg
- 1 teaspoon of vanilla extract
- 2 cups of all-purpose flour
- 1/2 teaspoon of baking soda
- 1/2 teaspoon of salt
- 1 cup of your favorite mix-ins (chocolate chips, dried fruits, nuts, etc.)
Instructions
- In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
- Add the egg and vanilla extract to the bowl and mix until well combined.
- In a separate bowl, whisk together the all-purpose flour, baking soda, and salt.
- Gradually add the dry ingredients to the butter mixture, mixing until just combined.
- Stir in the active sourdough starter until the dough is well incorporated.
- Finally, fold in your favorite mix-ins such as chocolate chips, dried fruits, or nuts.
- Cover the dough and refrigerate for at least 1 hour or up to 48 hours. The longer you proof the dough, the crispier the result!
- Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
- Using a cookie scoop or spoon, drop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 10-12 minutes or until the edges are golden brown.
- Allow the cookies to cool on the baking sheet for a few minutes, then transfer them to a wire rack to cool completely.
- Enjoy your homemade sourdough snacking cookies!
Variations
Feel free to get creative with your sourdough snacking cookies by experimenting with different mix-ins. Try adding shredded coconut, chopped nuts, or even a sprinkle of sea salt on top for an extra flavor boost. You can also replace some of the all-purpose flour with whole wheat flour or incorporate oats for a heartier texture. Let your imagination run wild and customize your cookies to suit your taste!
